The excellence of long ageing cava

In Gramona we work in our lands from the basins of the Anoia and Bitlles rivers, separated from the Mediterranean sea by the Garraf massif, in the south of Barcelona, ​​from the middle 19th century. Here, the fifth generation of this family of winemakers continue betting on the search for the excellence of the great sparkling wines: the long aging, allied with a unique variety: the xarel.lo, backbone of our wines.

We pursue the reflection of our landscape and our soil in each bottle, and for this we resort to organic farming and biodynamics in the cultivation of our vineyards. In fact, we take the responsibility for each process of making our wines, from the field to the bottle: we collect the cluster manually, we use a selection table, then the bunch enters by gravity, and we press it whole. We have an exceptional raw material.

Already in the cellar, with a careful, traditional and artisan processes that we learned from our ancestors, we continue to model every wine with our hands. In the darkness of our cellar hundreds of thousands of bottles are resting, which, sealed with a natural cork stopper during the second fermentation, will reach their own personality, a product of the genetics of their land, the character of their wine and the education received. Each one of them has been manipulated by the hands of our master winemakers to reach the delicate hands of our responsible for labeling, wrapping in cellophane and fitting by hand.

Normally more than 30 years it takes a sparkling wine of Gramona to be elaborated – more than 20 years of vineyard and more than 10 years of aging – and more than 20 people will have worked with their hands plant, fruit and bottle before seeing the light.
